Chicken Tinola

A popular Filipino dish. If my memory serves me right, in the novel Noli Me Tangere written by Dr. Jose Rizal, this is the dish prepared by Capitan Tiago for the get-together party thrown for Crisostomo Ibarra.

Ingredients:
1 kilo chicken (chopped into pieces)
4 tsp fish sauce
4 to 5 pieces of garlic (cut into small pieces)
1 onion (sliced thinly)
small piece of sliced ginger
water or rice water
pepper (optional)
choko or upo

Procedure:
1. Saute ginger then add garlic and onions.
2. Add the chicken and cooked until golden brown. Add fish sauce, pepper and water.
3. Add the vegetables when chicken is cooked.
